"Lemon muffins with sugar glaze"

The original recipe calls for orange: orange zest and orange juice.
I decided to try it with lemons. Now I think my mom's addicted to them...


Ingredients

  • zest of 1 big lemon
  • 1 dl lemon juice, freshly squeezed
  • 2 eggs, at room temperature
  • 1,5 dl sugar
  • 100g butter, melted
  • 3 dl white flour
  • 1,5 tsp baking powder
  • 1 tsp vanilla sugar

Glaze

  • 1,5 dl powdered sugar
  • 1 tblsp lemon juice
  • edible sugar sprinkles (optional)


Method:

  1. Beat the eggs with sugar and add the melted butter.


  2. Mix the dry ingredients and add the lemon zest.

  3. Add the dry ingredients and the lemon juice to the egg mixture.


  4. Mix gently but don't over mix!!
  5. Spoon the batter in to paper or silicone muffin cups filling them 3/4 full.


  6. Bake at 200°C (400°F) for 12-15 min. Check if their done by inserting a toothpick in the center of a muffin. If it comes out clean, their done! Let them cool completely on a wire rack.


  7. For the glaze: mix the lemon juice with powdered sugar. You may need to add more juice so that the glaze will become slightly runny but still thick.


  8. Coat the cooled muffins with the glaze and decorate with some edible sugar sprinkles (optional).


Review: The muffins are really soft and moist and oh, so lemony and fragrant! The sugar glaze nicely balances out the mild acidity of the muffins so it's like yin and yang!

Tip:  1) Like ALL muffin recipes, DO NOT over mix the dough! As soon as you can't see the flour, stop mixing! It will ensure that the muffins will be soft and moist.
